Locally Sourced Sausages with Purple Peppers

An easy, one-dish, weeknight meal with ingredients from around town, since not every day can be Labor Day...

Peppers are at their peak!  I have to admit that I don’t generally use many bell peppers in my day to day cooking, so I’ve been struggling to find a use for the hefty supply that arrives in my CSA box each week.  From salsas, to succotash, in caponata, and raw dunked in various dips, it is safe to say where there’s a will there’s a way.  This recipe puts peppers in more of a starring role where they bring the sausages to life, balancing the heaviness of the meat with their sweet nature.  Purple peppers, like green, are actually somewhat bitter in flavor.  I would recommend using a combination of purple peppers with a sweeter yellow or orange pepper in this recipe.  Alternatively, you could use a sweet onion to round out the flavors.  For purple peppers, visit the Piedmont Farmer's Market on Saturday morning or join Burge Organic Farm's CSA program with easy pickup at the Whole Foods on Ponce.

For really great sausages in a variety of flavors, like this Boudin Blanc variety, I always go to The Spotted Trotter down the street in Kirkwood.  They are available at most of the in-town farmers markets as well.  Varying the type and flavors of the sausage used is another great way to make this staple dish your own.

Sausages with Purple Peppers

Prep time: 10 mins  Cook time: 40 mins
Serves: 4 This recipe could be made with any kind of sausage or color pepper. A good ratio is one sausage, half a pepper, a quarter of an onion, and 2-3 potatoes per person.

Ingredients
  • 4 sausages
  • 1 pound red potatoes, cubed
  • 2 large peppers, sliced
  • 1 large yellow or sweet onion, sliced
  • olive oil
  • salt & pepper
Instructions
  1. Preheat oven to 350F. In a baking dish, toss potatoes, peppers, & onions with olive oil to coat, salt, & pepper. Put in oven.
  2. Heat a cast iron skillet over medium heat. Sear sausages on each side until lightly browned, about 3 minutes per side. Cut into thirds.
  3. Raise oven temperature to 400F. Remove potatoes from oven and add sausages. Return to oven for an additional 20 minutes until potatoes and sausages are cooked through. Broil as needed to crisp potatoes, about 5 minutes.
